Cooking with Millie. Olive Oil Bread.

Making your own bread is so rewarding, especially as you cover it with butter after it's taken straight out of the oven.

Ingredients:

  • 600g white flour

  • 5g dry yeast

  • 400ml water

  • 20ml milk

  • 20ml olive oil

  • 13g salt

Method:

  1. Mix flour, yeast, and water together, then knead for 10mins

  2. Rest for 10mins, in a lightly oiled bowl covered with cling film

  3. Mix in milk, oil, salt and knead for 10mins

  4. Rest for 30mins in the bowl

  5. 1st Knock back: Press into a square 2.5cm thick, fold 1/3 then fold 1/3 over itself. Turn 90' and repeat 1/3 folds

  6. Rest for 30mins, in the bowl

  7. 2nd knock back as before

  8. Rest for 30mins, in the bowl

  9. Chop cough into two and place on a baking tray with baking paper

  10. Pre-heat oven as high as it will go, as the dough rests

  11. Spray water from a bottle for 1min to create humidity, before putting the dough in

  12. Bake for 10-20mins, turn and bake again for 10-20mins. It should be done before 40mins and sound hollow when you tap it
